I am never too busy to eat!

Sure, sometimes I'm too busy to post, but I am never and I mean never too busy to eat. My robust form is testimony to that, so without further adieu, I will show you some of the nosh that has been gracing my chipped plates and discerning palate...



Vegan Fried Seitan cutlet sandwich (take out from Masao's Kitchen) with Millet-Cauliflower Porridge and Chickpeas with Miso Butternut sauce.



Acorn Squash stuffed with Lentils and Quinoa on a bed of steamed Collard Greens and adorned by Arame Carrot Salad and Kim chee.



Split Pea Soup, nothing fancy.



Ginger Butternut Lentil Soup from La Dolce Vegan. M took the picture next to Voluptuous Vegan because he thought that's where I got the recipe.




Spicy Black Beans served on a bed of steamed kale



A Chocolate Chip Pancake yearning to be flipped...



Leftover Spinach Avocado Corn Refried Chipotle Casserole with Spanish Rice and an Ezekiel Tortilla



Black and Green Lentil Soup with Kombu

I am nothing if not well fed! And speaking of well fed...



I am so cold I have to go snuggle a warm puppy!

Hahaha! I just enlarged the pic of Sam to get a better look and Marty says, "Where was that picture taken. We don't have a dog bed like that do we?" Hee hee! Sam and Noble could be twins.

The food looks delicious! Lots of great ideas. Just curious, with the lentil soup do you eat the kombu or do you just use it for flavoring?

Wheresmymind: I used the recipe from VwaV and upped the chips! My boy was sick so he needed some good comfort food--what could be better than that?

VV: Sam and Noble do look frighteningly alike. Maybe they're cousins! As for the kombu, I added it for flavor and nutrients and ended up taking out one sheet and leaving the other one in there. It gave an interesting flavor. I don't know if I would necessarily recommend it based on the weirdness of the resulting flavor, but I have been reading all these recipes that advised cooking beans with kombu for added nutrition.

Great to see a new post from you... and so many delcious looking meals too!! My goodness. You have some very lovely presentation skills. I usually just dump everything in a bowl, but that acorn squash looks downright elegant.

i absolutely love acorn squash. i got a great recipe for one from Apartment Therapy that I've used many times in the past -- it's on my site if you're interested.

there is no better veggie for this time of year. i made a butternut squash soup last night in fact that i need to get up and posted ;)

Hey, it still looks like you're making a lot of macro meals - way to go! Everything looks really delicious and fitting for this time of year. A chocolate chip pancake would really hit the spot right about now...

just wanted to tell you that the chive seasoned tofu balls are actually the rosemary seasoned tofu balls that I tweaked a bit, from Vive le Vegan! :D

Your acorn squash presentation is so impressive- that arame is really dramatic! I crave some split-pea soup now. Mmmm. warm. And who can resist chocolate chip pancakes??

I usually use a very small amount of kombu in my beans/lentils, so it doesn't give off too strong a flavor. I wonder if I should be using more? What would Christina say? ;-) (I just said that b/c I know we both love her show!)

The stuffed acorn squash is making me hungry, especially with the arame salad on the side. I love arame but haven't had it in awhile. Everything looks so good in this post :)

I love that squash photo! I just bought two acorn squash on a whim and had no idea what to do with them, having never used them before ever. Did you just prebake the acorn squash, and then stuff them? or did you bake them with the lentil/quinoa mixture in it? love your blog!

Amanda: I prebaked the squash. I like my squash really cooked/charred, so I always roast it ahead of time and then put it in for a quick broil when I stuff it.

I have found that I like acorn squash even more than butternut squash!
